Mineral composition of raw and marinated-cooked arms from Pacific giant squid (Dosidicus gigas).

Background/aim: Shellfish consumption is often perceived as a potential health hazard due to the accumulation of toxic metals. The mineral content was investigated in marinated-cooked giant squid (Dosidicus gigas) arms from three Eastern Pacific fisheries (Peru, Chile and Benthic) elucidate their contribution daily recommended intakes possible presence pollutants. Material methods: Thirty macro- microminerals were analysed raw material, marination solution, cooking broth cooked product. Results: Both contained nutritionally relevant quantities essential (Na Mg) (Cr, Zn, Mn Se). Fishery origin led minor variations composition arms, while Benthic had higher retention Na juice likely greater size. Levels Pb, Hg, Zn or As found ready-to-eat product below tolerable upper intake levels. Conclusion: suggests that concerned are not affected by human polluting activities. Marinated-cooked cover part dietary requirements for minerals can be consumed without apparent negative nutritional implications.
